I'm partial to Scharffen Berger from California, and Caillebaut from France.
And Vosges Haut-chocolat makes some amazing chocolate truffles with all kinds of interesting flavorants (candied violets, guajillo and pasilla chiles, ginger/wasabi/sesame seed, curry/coconut, Chinese star anise/fennel, ancho chile and cinnamon, white chocolate with Kalamata olives and XVOO, hazelnuts and aged balsamic vinegar... the list goes on and on). They're pricy, but they are some of the most AMAZING chocolates I've ever tasted. Some are milk, some are white and some are dark. Check out their website.
